Okay, it seems to be a carrot kind of day...

Heavenly Carrot Soup

3 medium leeks, thinly sliced and rinsed
1 lb. carrots, thinly sliced
1/2 lb. potatoes, chopped
2 large ribs of celery, thinly sliced
5 cups vegetable stock
1 1/4 teaspoons dried tarragon 1-2 tablespoons light miso or sea salt to taste

Saute leeks for 2 minutes. (Original recipe is in 1 tablespoon oil.  Vegetable
stock, light vinegar, or water works well.)  Add remaining ingredients, bring
to boil, then simmer covered for 25 to 30 minutes.  You can then puree the
soup in batches in a blender or food mill, if desired.  Garnish with
watercress and croutons to serve.
