After you have baked it, look for two signs of doneness:
1. the sides have pulled away a little from the walls of the baking pan all
around
2. the top is showing little cracks somewhere
Non-underdone insurance:
At end of baking period, turn oven off, leave cheesecake in oven and leave
oven door completely closed for a half hour.
Then cool cheesecake on a rack on countertop.
