Dr. Ornish has studied this and if it is done all at once people are more
apt to stay with it than doing it a little at a time. Going nearly fat and
processed food free is different that just going veggie. A little fat only
makes you want more. It is better to get rid of all of it at once.
I have a cookbook that is forwarded by Dr. Ornish that is really good in
that it uses all regular foods instead of the unusual ones that so many
veggie cookbooks use.
Example:

Scalloped Corn
Serves 6
1 15 oz can creamed corn
1  cup cracker crumbs
1/2 cup green peppers chopped fine
1/2 cup red onion chopped fine
1 cup soy milk lite
1/2 cup eggbeaters
salt and pepper to taste  and cajun seasoning
combine all ingredients (except cajun seasoning) in medium size mixing bown.
Pour into sprayed 1 1/2 quart casserole, sprinkle with cajun seasoning. Bake
at 350 degrees about 1 hour.
Calories 114 fat 1, cholesterol 0 carbs 21 protein 4.9, sodium 66, potassium
167, calcium 21
