thank-giving stuffing

I'm honored to share mom's recipe, altered because she sauteed
everything in a pound of b***n grease... this ff veggie version has been
in our home many moons - enjoy
	Sautee in water or veggie broth: 
2 onions, chopped
2-4 cloves garlic
8-10 stalks celery, slice on diagonal
2 potatos, skin still on
2 granny smith apples, seeded and chopped @ 1" or less squares
1# freshmushrooms
4 sprigs fresh parsley, chopped
when this is barely wilted, add 3 tsp poultry seasoning, 1/2 tsp nutmet,
1/2 tsp curry powder and 1/2 tsp ginger.  
Finish cooking, but remember they'll cook in the bird so not too long,
then add lg bag of unseasoned bread crumbs or bread cubes (one year we
bought seasoned and that was fine too!)
stir well, mix it up and bake in covered casserole, 20-30 min. or
re-heat in m-w
one year we also added raisins and that was good, sweet and yummy - most
of all, remember to give thanks for all the gifts!
