Corn muffins

Lots of you have requested the corn muffin recipe, so here it is - its from
the Fatfree site on the web, I didn't write down the original poster.
I've added comments on what I use - these are really yummy - quite
substantial muffins.


Corn Muffins

2 cups corn (I use one 440g can of corn kernels, drained, and a 310g can of
creamed corn, undrained)
3/4 cup milk (I use skim powdered milk, but I guess that whatever you use
would be ok)
1/4 cup yoghurt (ff of course)
1/3 cup maple syrup or honey
2 egg whites (I use Country Harvest Egg Like egg replacer)
1 cup wholewheat flour (I use regular plain flour if I don't have wholewheat)
3/4 cup cornmeal
1/2 tsp baking soda

Whisk the first 5 (wet) ingredients together, add the sifted dry
ingredients.  Mix together (don't mix it too much), place into muffin tins,
bake at 450F for 15 min.




Here's another recipe you might like to try - I made this for desert
tonight and quite enjoyed it, although I think I cooked it for too long as
it was a little dry, but quite yummy.  Real comfort food!!

Rice Pudding
(Recipe from Lowan WholeFoods Wholegrain Rice Flakes packet)

2 cups rice flakes (I found these rice flakes in my supermarket)
1 tsp vanilla
1/4 cup sugar
3 cups milk (I used powdered skim milk)

Place first three ingredients into a pie or casserole dish, pour the milk
over these.  Bake in a moderate oven (150C or 300F) for 45 minutes.
(The original recipe called for 1 large teaspoon butter, but I just left it
out).
