Oil-less Bread

I've been experimenting with making my own oil-less bread. I start with
a french bread recipe and just eliminate the oil. I usually add herbs so
I don't want to use fruit purees or anything sweet. 

My problem is that it come out so hard and crusty. Does anyone have a
suggestion for making it come out softer? I guess the oil was softening
it up.
