gnocchi

Emma asked why her gnocchi turned in to mush after cooking. Two reasons:
1)  Too much potato.  Try adding more flour.  The dough should have a
consistency similar to that of bread dough, smooth and elastic.  If, on
the other hand, it cooks too al dente, add one teaspoon of baking powder
to the dough to make it lighter;
2)  It cooked to long.  The gnocchi should be removed from the boiling
water as soon as they float to the surface.
