Chili and Sloppy Joes are the two easiest substitutions I've made so far;
but I plan to use it in an adapted Shepherd's Pie (Beanherder Pie - I think
originally from this list).
For 1 cup TVP, soak in 7/8 cup liquid (or more if you like) which can be
flavored pretty much as you wish; soy sauce, spices, broth etc.
