sweet potato black bean burritos

Hello,

This is a nice fall recipe.  It comes from Moosewood Low Fat Favorites.
I'm typing from memory, but it seemed pretty fail safe.

Sweet Potato and Black Bean Burritos

5 cups cubed sweet potatoes
3 cups chopped onions
4 cloves garlic
3 cups cooked black beans
1/4 cup chopped cilantro (or parsley)
chopped green chilis (to taste, or use dried red)
4 tspoons coriander
4 tspoons cumin
salt
2 tablespoons lemon or lime juice
8 flour tortillas
salsa

Cook the sweet poatoes.  Saute onions and garlic for about 5 minutes in
medium of choice.  Add cumin and coriander and cook for another minute
or two.  Drain the sweet potates, put in food processor onions/garlic
and other ingrients.  Puree until smooth.  Fill torillas and roll up.
Place in casserole dish and cook for 30 minutes in preheated 350 oven.

Serve with salsa and brown rice.
