english-muffin pizzas

easy and quick:

4 whole-wheat english muffins
2 medium tomatoes, thinly sliced
1 small eggplant, thinly sliced
2 fresh white mushrooms, sliced
1 cup non-fat soy cheese, mozzerella style
24 "Yves" brand imitation pepperoni slices (one package has enough slices)

slice open muffins, layer each muffin half with tomatoes, 1 slice eggplant, 
1/8 cup soy cheese, 3 slices mushroom, and 3 slices veggie pepperoni.  if 
desired, sprinkle a little oregano and basil over the top.  bake in 
pre-heated 350 degree oven for about 10-12 minutes (until cheese melts).  
serves 4.  my family (incidentally, they aren't vegetarian or fat-free 
eaters) loved these little pizzas, and they were hearty and filling -- a meal 
by themselves.
