Couscous

Made this main dish last night adapting the recipe from a Near East ad. The
lemon gave it a nice flavor. Do try it if you are looking for a QUICK dish.
Patty in AZ

Lemon Couscous with Veggie Dogs or Tofu

2 cups broccoli flowerets (I used frozen and just ran them under water for a
minute to defrost a little)
1 pkg. Near East Roasted Garlic and Olive Oil Couscous (Casbah will also
work and it's fatfree)
1 1/2 cup cubed tofu or 4 veggie dogs - sliced (or you could use some Gimme
Lean sausage style)
Juice of one lemon (about 3 Tbs.)
1 tsp. grated lemon peel

Spray a large skillet or pan with olive oil; bring 1 1/4 cups water, and
contents of Spice Sack to a boil. Stir in couscous, sliced veggie dogs or
cubed tofu, lemon juice and lemon peel. Remove from heat. Cover; let stand 5
minutes. Fluff lightly with a fork. Serve immediately. Serves 4.
