A couple of things that may help:

Don't over mix.  Mixing tends to develop the gluten in the flour, and
that can make it rubbery.  

Don't overbake.  I usually set the timer for the minimum time suggested,
or even less. If they need more time, then it's easy to do.  But you
can't give them less time.
