very good and reliable recipe

 Holiday Mashed Potatoes
Serving Size  : 10

   3      pounds(12 )   potato -- peeled, cooked, hot
   1      8 oz.         cream cheese
     1/4  cup           Liquid butter buds
     ½  cup          Fat free sour cream
     ½  cup          Skim milk
   2                    eggs or the equivalent of egg substitute.
     1/4  cup           onions -- chopped
   1      tsp           salt
          dash          pepper
The onions are optional and the cream cheese should be at room
temperature.
Litely beat the eggs with the milk.
Mash potatoes, add cheese in small pieces and then the butter.  Beat
till melted.  Add sour cream and then the milk/egg mixture and onions.
Add salt and pepper.  Beat till lite and fluffy.  Place in greased 9"
casserole and refrigerate several hours or overnight.
Bring to room temperature before baking at 350 for 45 minutes uncovered
until litely brown.

Note:  I use no fat cream cheese and sour cream, butter buds and egg
beaters. You really can not tell.   This can and should be made the day
before.  I do let it get to room temp before putting in the oven.  Make
this year after year and it is great.  Can top with a touch of paprika
for color.  Enjoy.
