Some time ago (I'm behind in my reading of ff digests!) a request was
made for a gingerbread recipe. Here's one that I use, slightly modified
(to remove the added oil) from a recipe from a February 1994 issue of
Vegetarian Times.

Orange Gingerbread

1/3 cup applesauce
1 cup dark molasses
1 1/4 cup orange juice
1 Tbs. finely grated orange rind
2 1/2 cups whole-wheat flour
1 tsp. baking soda
1 tsp. cinnamon
2 tsp. ground ginger
1/2 tsp. salt
1/2 cup raisins

Preheat over to 350 degrees F. In a large bowl, mix together wet
ingredients. In a medium bowl, sift together dry ingredients. Add
raisins. Add dry ingredients to wet ingredients and mix well. Pour into
a non-stick 9-inch by 13-inch pan and bake 40 minutes, making sure not
to overbake. Gingerbread will be moist.
