Mashed potatoes

When he got to the part about adding some skim milk, I
could only think of my late Mom's favorite
trick, which was to "make" skim milk out of potato water
and powdered milk.  It is really a easy
and flavorful addition to mashed potatoes if you don't
already use it.You can also use a good bit more
powdered milk if you are looking for more of the nutrients
milk provides.  My mother also kept a jar
of "pot likker"(water left over from cooking vegtables) in
the fridge to be added to the weekly soup pot.
She claimed it was highly nutritious and much too good to
get poured down the drain!
