Tofu Veggie Dip


  I have been reading the list for some time now and enjoying it.  Now I
think I can offer something back.  Someone wanted a Tofu Veggie Dip I found
one in my Vita-Mix cookbook that my family loves.  I think it could be made
in regular blender.  I also use it place of mayo.


2 (10.5oz.) packages of lowfat silken Tofu
1/2 cup plain nonfat yogurt or nonfat sour cream
2 packages of dry salad dressing mix ( I used no fat ranch)
1 Tablespoon lemon juice
Dash of pepper
1/4 teaspoon salt
1 teaspoon Dijon mustard
1 Tablespoon apple cider vinegar

Blend all ingredients together until smooth.
Also does anyone have a book with the cooking times for a pressure cooker.  I
lost mine and someone told me it was a fast way to cook beans.?
