Jenny asked for yuca recipes.
I looked through some of my books and one of them had several recipes,
however they are not low fat, so not appropriate for this list. However, the
recipe book states: the bland tuber lends itself to soups, stews, fritters,
and tasty snacks.
When I was in Costa Rica I stayed with people who live there. One dish was a
stew and it had yuca, potatoes, carrots and plaintain and beef :) Anyway a
stew dish of some kind should work well. I really enjoyed the food in Costa
Rica and wrote down a lot of the recipes, but not this one.
