Nutritional Yeast

Someone recently requested nutrient information on nutritional yeast. My HFS
(keeps it on the shelf in bulk) and lists the following: 1 serving = 3 Tbsp;
calories-47; fat <1 Gm; sodium-5 mg; carb-5 Gm; fiber-4 mg; sugar-1 mg;
protein 8 mg; calciuim 1 % RDA; iron 3 % RDA. Here's a great recipe
reprinted from the McDougall Newsletter (March/April 1995)

MACARONI AND OATY CHEESE

Servings 8
Prep time: 15 minutes
Cooking time: 30 minutes

2 cups water
1/2 cup quick cooking oatmeal
1/4 cup nutritional yeast
2 Tbsp cornstarch
2 Tbsp lemon juice
1/2 Tbsp onion powder
1 1/2 tsp salt
1 (4 oz) jar diced pimento
1 pound macaroni

Preheat oven to 350 degrees.
Place all ingredients except macaroni in a blender and process several
minutes until very smooth and well blended. Pour into a saucepan, cook and
stir until thickened. 
Cook macaroni until just tender. Drain and mix in sauce thoroughly. Bake
covered for 30 minutes.

My mother says how can this taste so much like cheese? It's all in the
yeast. Enjoy!
