Orange Muffins

Orange Muffins

2 c flour
1/2 brown sugar
3 tsp baking powder
1/4 c orange juice
1 tsp vanilla
1 tsp orange extract
3 tbsp. unsweetened applesauce
1/4 c egg substitute
1 tbsp orange peel, grated

Preheat oven to 400 degrees.  Lightly spray muffin cups with nonfat
cooking spray.
In a large bowl, combine sour cream, orange juice, vanilla, applesauce
and egg substitute and blend until smooth.  Add to flour mixture and mix
until dry ingredients are moistened.  Fill muffin cups 3/4 full and bake
in preheated oven 20 minutes, or until toothpick inserted in center comes
out clean.

I used liquid butter buds instead of applesauce and I used egg whites
instead of egg substitutes.  They turned out good!
