Sweet Potato/Yam Recipe

This spread serves as an appetizer with your favorite ff cracker or pita
chips.  For other meals, its a vlf bread spread.

2 medium to large sweet potatoes
2 T. vegtable broth
1 medium onion, minced
1 T. maple syrup
1 T. tahini
salt and pepper to taste

Preheat oven to 350 degrees,  and bake potatoes until soft.  When
potatoes are nearly done, "saute" onions in broth, lowering heat until
they are limp and nicely browned .  Place the onions in a food processor
or bowl.  Scoop out cooled potato flesh into the food processor or the
bowl you will use to mash all together.  Mash up potatoes, onions,maple
syrup, tahini, salt, pepper and water if needed.  You are looking for
a peanut buttery consistency, I have been known to add a 1/2 t. of
coriander and felt it enhanced the recipe.  An important element is to
get the onions nice and brown, sort of a toasty taste, and I will next
time, chop the onions and bake with the sweet potato!  This makes about
three cups with 10 calories per T.
