RE:gluten-free stuffing

My mother has had to give up gluten in wheat and oats, but she can eat
corn, so we make stuffing/dressing with a standard cornbread recipe in
which the cornbread is made with no wheat flour.

Another alternative is rice dressing. My sister-in-law has a great simple
recipe:

Make one package wild rice mix (usually Uncle Ben's) with water or broth
for the liquid.

Stir in one can drained and rinsed garbanzo beans, 1/2 cup golden raisins
and 1/2 cup pecan pieces. Garnish with chopped green onion tops and serve!
