Hi Everyone!

I just wanted to introduce myself. I too used to subscribe to this site many years ago and we had a very active discussion group and lots of recipes. I moved to Ireland and lived in a area where it was hard to receive anything via a modem/computer. Now I'm back in Sacramento, CA so I thought I'd join up again.

Maybe we can liven the site up by communicating fat-free information and recipes.

Here is a nice recipe for Banana Bread
Not heavy at all...

Banana Bread
Preheat oven to 350 degrees. Use a non-stick or spray an 8"x8" cake pan. Or 11 muffins in my tins at least.

Mix the dry ingredients together in a bowl:
2 cups flour
1/4 cup sugar or to taste
1 Tbs. baking powder
3/4 tsp. baking soda

Mix the liquid ingredients together separately:
3/4 cup hot water
1 Tbs. + 1 tsp. vinegar
4 very ripe bananas, well mashed

Combine the liquid with the dry ingredients. Mix well, be careful not over mix. Pour into prepared pan. Bake 25 to 30 minutes. Insert a toothpick to test for doneness. Cool 10 minutes then remove from pan. Cool completely on rack these are best eaten the next day.

Variation

Cocoa-ginger muffins or bread

Use only 2 bananas
add 1/3 cup cocoa (or more)
2 teaspoons ground ginger (or to taste, I like ginger)
