chineese fried rice

My husband loves fried rice so I exsperimented with a virtually fat-free
substitute. the recipe on the rice mix calls for oil which i substituted
with a non-stick pan and cooking spray, whole eggs which i substituted w/
egg beaters and some type of meat which i just left out


   1 pkg. SunBird fried rice mix (found at most kroger stores)
   1 box Uncle Bens instant 10 minute rice (box comes w/ 4 -1 c. sering
bags)
   2 tsp. (not sure if 1 or 2 it will say how much on mix) reduced sodium
soy sauce
   1 c. thawed frozen peas & carrots
   half a cup of egg substitute
  (the rice mix also call for chopped green onions i left them because my
hubby doesnt like them but you can add them if you wish.)



cook all 4 pkgs. of rice according to directions on box. after it has cooled
down put in refigerator till it's cold. lightly spray a large non-stick
skillet w/ noncooking spray add rice stirring frequently so it wont stick
until heated then follow directions on the rice mix. i would write them down
but i dont know them by memory. they are very simple. at this point the meal
should take about 5 minutes to complete.
