Ahhhh, Yes - Sounds like a winner.
This one I will try this weekend -
Leftovers I always blend with non fat sour cream and use as a dipper.

4 eggplants, cleaned and chopped
1 tsp chilli powder
1 tsp cumin powder
1 tsp coriander powder.
1/2 tsp turmeric powder
salt to taste
3 tomatoes finely chopped
1 onion finely chopped

dry Fry onions in 2 T broth or water till golden brown. Add powdered
spices and stir fry continuously till the oil begins to
separate. Add tomatoes Add eggplants. Add salt to
taste. Cover and cook till done.

Serve hot with tortillas.
