Textured Soy Protein In Meatless Entrees
Textured Soy Protein may be hydrated and flavored with soup bases, bouillon,
juices, sauces, soups, and spice mixes to be used as taco filling, pizza
topping, rice stir-in, and much more. Be sure not to completely hydrate the
Textured Soy Protein before adding it to other ingredients so that it will
still be able to absorb the other flavors. Usually, allowing the Textured
Soy Protein only as much water as it will absorb in 2-3 minutes works well.
Then drain and add to other ingredients.
Use Textured Soy Protein dry if you are adding it to other ingredients that
have plenty of liquid. Textured Soy Protein will readily assume the flavors
of juices and sauces as it fully hydrates.
Season some Textured Soy Protein or grits  and use as crumble topping on
casseroles or fruit.

Taco Casserole
1 green bell pepper, chopped
1 med. onion, chopped
1 can whole kernel corn
1 can chopped green chilies
1 can Mexican diced tomatoes
2 cups textured soy protein
1 pkg. (2 cups) fat free shredded cheese
1 pkg. (Taco Bell) taco seasoning
Strain water from corn, chilies, tomatoes, and mix together under medium
heat. Add the taco seasoning, mix well, then add soy protein. Stir often
until excess water has dissipated. Remove from heat. Mix with other
ingredients, except cheese. Put in 9x13 pan, spread cheese on top and bake
in preheated oven 350 degrees for 20 to 30 minutes, or until cheese melts.
Serve and enjoy as is or in taco shells or tortilla....
Meatless BBQ Sandwich Filling
6 CUPS OF TEXTURED SOY PROTEIN CHUNKS = 15 SANDWICHES
Place 6 cups (1/2 lb.) of Textured Soy Protein chunks in pan
Pour 2 cups (1 lb.) of water evenly over chunks
Stir to evenly moisten chunks, let stand for 5 minutes.
Add 3 cups (1.75 lbs.) of favorite BBQ sauce and stir until evenly mixed.
Let marinate for 1 hour.
Cook in crockpot, stovetop pan or microwave until hot, then serve.
Uncooked or cooked BBQ mix can be refrigerated or frozen for later use.
