It is all right to use fresh garlic instead of garlic powder. Actually I
prefer it. I must confess I have a tendency to use too much garlic powder as
it is easy to just pour it in. I normally mince up about a 1/4 to 1/3 cup of
garlic at a time and keep it in the frig. I cook with a lot of garlic and
use that up in a week or less.
