I've forgotten who posted the first peach request, but there's always an
easy method to freeze them. It works with green peppers and onions, too:
Dip the peaches in hot water and peel off the skin. Half or quarter them,
removing the pit. Lay them out on a cookie sheet and freeze them. Store
them in zip lock bags. They'll keep their beautiful juice and work well in
baking recipes, on ice cream, in smoothies, over cereal, etc.
For the onions and peppers? Just wash them and dice them.
