Polenta is really good, and really easy to make. I like to do this:
make it ahead, maybe flavor it just a bit with some orange juice in place of
some or all of the water.
Slice it the next morning about the thickness of bread so you have sort of
"fingers" of polenta.
Pour some orange juice, or another flavorful juice into a fry pan and "fry"
the polenta. If it's non stick just go ahead and fry it.
Serve with real maple syrup.
