LOL!!!!Oh man! We found out about pepper oils the hard way too--my husband
wears contact lens and that night--oh my! serious pain. Now I do the peppers.
Tip from a TV cooking show (Sarah Moulton, I think)--the heat is in the white
fiberous part--the seeds get it by association--so if you get as much of the
white part out that helps with the sear [unless you want it, of course]. I've
found that if I cut them under running water and keep my mouth closed (not
easy) that helps cut down on the flying oils as well.
