ORZO LENTIL SWEET POTATO STEW

	
THIS " STEW " recieved RAVE reviews and mant recipe request from a pot luck
I brought it too.		I hope you will like it too.

Curried Lentil and Orzo Salad

Makes 6 servings 
1 cup red lentils 
3 cups water 
1 cup orzo pasta 3 tablespoons olive oil (divided) 
1/2 cup chopped fresh parsley 
1/4 cup chopped fresh cilantro 
3 carrots, peeled and diced 
2 parsnips, peeled and diced 
1/2 celery root, peeled and diced 
1 large sweet potato, peeled and diced 
3 tablespoons minced shallots 
1 teaspoon ground cumin 
Salt 
1 teaspoon curry powder or to taste 
1 tablespoon chutney 
1 tablespoon Dijon mustard 
1/4 cup rice vinegar 
Freshly ground pepper to taste 
In a medium saucepan, bring lentils and water to a boil. Reduce heat to a
simmer and cook until lentils are tender, about 15 minutes. Drain and place
lentils in a large bowl. 
While the lentils are cooking, bring a medium saucepan of water to a boil.
Add orzo and cook for 10 minutes. Drain and add to lentils. Stir in parsley
and cilantro. 
Preheat oven to 450 degrees. 
In a large bowl, toss carrots, parsnips, celery root and sweet potato with
shallots and spray lightly with non stick cooking spray. Sprinkle with cumin
and 1/2 teaspoon salt. 
Spread vegetables in one layer on a baking sheet with sides. Roast about 20
minutes or until tender and slightly browned. Let cool and add to lentil
mixture. 
Whisk together curry powder, chutney, mustard, vinegar, and salt and pepper
to taste. Pour over lentil mixture and serve.
