A deelish cheese-less ravioli I found in the frozen section of my food coop is by (I  think) Soy Boy.  It's stuffed with tofu, and it's scrumptious!

Or, you can make your own stuffing (use mashed tofu and whatever seasonings you  like: basil, oregano, sauteed onions & garlic (or powder) and a little
nutritional yeast, maybe a little sweetener since ricotta is kinda sweet) and stuff it inside those big pasta shells & bake them. Yummmy!
