Quinoa recipes

Someone requested quinoa recipes about a week ago.  Here are a few I
like (and of course, one of them is from this list).

                         Microwaved Quinoa Pilaf

     1/4  cup           red bell pepper -- diced
   2      cloves        garlic -- minced
   1      small         onion -- chopped
     3/4  cup           quinoa
   1 1/2  cups          vegetable broth

Place pepper, garlic, onion and sesame oil in a 4-cup glass measure.
Microwave uncovered on High for 2 minutes and stir.  Add quinoa and
broth and microwave on high for 5 minutes, stirring once.  Microwave on
medium (50%) for 15 minutes. Stir.  Microwave on high another 2 minutes
or until liquid is absorbed.  Grains should be pearly, with white
outline visible.  Fluff with a fork.

                          Quinoa Skillet Dinner

   1      cup           quinoa
  15      ounces        tomatoes with green chilis
  15      ounces        canned beans (pinto, black, or kidney) -- rinsed
and drained
  15      ounces        hominy, canned (white or yellow) -- rinsed and
drained
     1/2  teaspoon      garlic powder
     1/2  teaspoon      onion powder
   1      teaspoon      dried parsley
   1      teaspoon      dried basil
     1/2  teaspoon      dried thyme
     1/2  teaspoon      salt -- or more to taste

Rinse quinoa thoroughly (it will taste bitter if you don't) and cook,
covered, on low heat for 15 minutes in 2 cups boiling water. Stir in
tomatoes and chilis, beans, hominy, herbs and spices and heat
thoroughly. Serve.

                        Quinoa With Broccoli Rabe

   1      cup           quinoa
   2      cups          vegetable broth
     1/2  cup           chopped onion
   1      teaspoon      chopped garlic
   1 1/4  pounds        broccoli rabe or broccoli -- trimmed and chopped

     1/4  teaspoon      salt
     1/4  teaspoon      red pepper flakes

1. Toast quinoa, stirring, in nonstick skillet over medium-low heat, 5
minutes. Bring broth and water to boil in medium saucepan; stir in
quinoa. Reduce heat to medium-low; cover and  simmer 12 to 15 minutes
until liquid is absorbed and quinoa is tender. Fluff with fork and
transfer to large bowl; cover and keep warm.

2. Heat a small amount of water or broth in large nonstick skillet over
medium-high heat. Add onion and garlic; cook 3  minutes. Stir in
broccoli rabe, salt and red pepper. Cook until broccoli rabe is tender,
5 to 7 minutes. Stir vegetables into quinoa. Serve warm or at room
temperature.
