Roasted Vegetables and Lean Links

This recipe is from the Lightlife Foods newsletter.


All you need to do is chop the veggies.

4     Lean Link Italian sausages
1     large onion
1     portabello mushroom, or several smaller ones
1     tomato
1     green or red pepper
choice of other veggies:  cabbage (will turn blue when cooked)
1 or 2     carrots

Cut the Links into bite size pieces and line the bottom of a baking or
roasting pan.  Cover with chopped vegetables, spray lightly with PAM,
and sprinkle with salt and pepper to taste.  Bake in the oven at 400 F.
for a total of 30-40 minutes (depending on vegetables used). Stir every
10-15 min. -- the mushrooms and tomato will make it juicy. This can be
served alone or over rice. Serve hot.  (Makes two servings).
