Mediterranean-Style Veggies

Hi, all,

Found another one on AOL.  Sounds like a winner.  It originally had chicken 
broth, though, so the calories may be slightly off.

Mediterranean-Style Vegetables (Better Homes and Gardens)  

This recipe is featured in the book Better Homes and Gardens Healthy Family 
Cookbook.
 
Ingredients:
2 cups zucchini sliced 
2 cups red, yellow, or green sweet peppers sliced 
2 cups broccoli flowerets 
1/4 cup broth (reduced-sodium)
2 garlic, cloves minced
1 tablespoon basil or oregano snipped fresh or 1 teaspoon dried basil or 
oregano, crushed
1/4 teaspoon pepper 
3 tomatoes, medium chopped

Nutrition Facts (per Serving):
40 calories, 9 g carbohydrates, 0 mg cholesterol, 0 g fat, 44 mg sodium

Serves: 6 to 8 side-dish servings

Preparation Instructions:
Prep Time: 15 minutes 
Cooking Time: 6 minutes 

In a Dutch oven or large kettle combine zucchini, sweet peppers, broccoli, 
broth, garlic, basil or oregano, and pepper. Bring to boiling; reduce heat.

Simmer, covered, for 6 to 8 minutes or till crisp-tender, stirring 
occasionally. Stir in tomatoes.
