fat free pies

Does anyone have a fat free or low fat pie
recipe?Thanks!Maggie
here are some of my favorites.Have fun!-Shelly-Low Fat
Chocolate Pie Filling  
2/3 c. sugar 1/2 c. cornstarch 6 T. cocoa4 c. skim
milk - add 1 c. at a time 
2 t. vanilla  mix dry ingredients, add milk and
vanilla.  Microwave
(depending on wattage) in intervals and stir between
to thicken,  when thickened, but still able to pour,
do so into your favorite crust....refrigerate with
 plastic wrap ON filling....serve with topping of
choice.....makes about 9"pie, and can easily beadapted
for bigger plates.
 Graham Cracker Crust  1 egg white 2 tbs brown rice
syrup
4 lowfat graham crackers (crushed fine) 
1/4 - 1/2 cup whole wheat flour (or more)1 tbs water 
 Beat egg to frothy state, blend in rice syrup.  Stir
in crushed graham crackers, add 1/3 cup whole wheat
flour and water (perhaps only a tsp of water at a
time).  Get it to a ball which you can knead between
your fingers.  Roll it out (on parchment paper,
preferably) to the size of a 8 inch piepan, gently
peel the parchment paper off the crust as you are
 settling it into a non-stick or lightly swiped w/oil
piepan.  Bake 350F for about 10 minutes, or add
piefilling if you plan to bake them together. This
should go good with apple pies, or strong
flavoredpies.  Mocha Cheesecake
16 servingsThis is one of the best cheesecakes i have
ever
tasted! Fat of no fat, it's great. I made it for my
dad for his birthday and he could believe how rich it
was! I was amazed! Everone should try this,
it'sgreat!!!!crust
1 box reduced fat chocolate wafer crumbs1 tablespoon
sugar
2 tablespoons fat free margarine, meltedFilling
2 tablespoons instant expresso powder2 tablespoons
cofee liqueur
1 container(16 oz) Non fat cottage cheese1 container(8
oz) fat free sour cream
1 container(8 oz) fat free cream cheese1 cup sugar4
tablespoons flour
egg replacement equevelent to 3 eggs2 tablespoons
unsweetened cocoa powder
1/2 teaspoon cinnamonTo make crust:
Preheat oven to 325 degrees Farenheight. Spray 9 inch
spring form pan with non stick spray.
 In a food processor or blender, process wafers and
sugar until fine. Add margarine; process until just
combined. Press into bottom and 1 inch up sides
ofpan;chill.To make filling:
In food processor or blender, process instane coffe
with liqueur until dissolved. Add cottege cheeseand
process until smooth.Pour batter into prepared pan.
Bake 1 1/2 hours or until center is set.Turn off oven
and leave cheesecake inside for 30 minutes. Cool on
wire rack. Chill 4 hours or overnight before serving.
