Especially for Nancy and Hubby who were curious to try other pesto recipes -
I have not tried this myself but got the recipe as is from a book called :
Foods that cause you to lose weight by Neal Barnard, M.D.
Combine in a blender or food processor :
1 10.5 ounce package mori nu lite-firm silken tofu
2 cups fresh basil leaves
2 cloves garlic ( or as much as you desire ! )
1/2 teas salt
Blend until completely smooth ( or until desired consistency )
I suppose you could add a dash or two of non fat parm cheese if you liked -
I can see where the firm or xtra firm silken tofu would give a creamy
consistency. I hope you enjoy !
