I also want to second this recommendation.  This is a great cookbook,
especially for those wanting to incorporate more high-nutrient foods
into their diet.  Foods such as a sweet potatoes, butternut squash,
quinoa, swiss chard, etc.  Nearly every recipe is a nutritional
powerhouse. And while they all seem to call for added oil, it is
rarely integral to the recipe. However, the recipes all have a certain
sameness about them.  But, if you are a fan of the bajan bean recipe I've
posted (and it's easily made varients), you will love this cookbook as
that recipe could fit right in this cookbook and not look out of place.
Many of these recipes can be easily frozen and doubled.  You'll
probably see some adaptations of recipes from this book posted here in
the not too distant future.
