Hey, everyone! I was looking through a new vegan cookbook, and I found
a recipe using garam masala-what perfect timing! The recipe wasn't low
fat, though, so I altered it a bit:
**Curried Potato and Green Pea Soup**
from "150 Vegan Favorites"
1 medium yellow onion, diced
2 cloves garlic, minced
1 serrano chili pepper, seeded and minced
2 tsp. curry powder
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. garam masala
1/2 tsp. salt
6 cups water
4 cups peeled, diced, white potatoes
1 large carrot, peeled, diced
2 cups green peas
In a large saucepan, 'saute' the onion, garlic, and chili pepper. Cook
for 4 minutes. Stir in the spices and cook for 1 minute over low heat.
Add the water, potatoes, and carrot. Cook over medium low heat until
the potatoes and carrots are tender, 25 minutes. Stir in the green peas
and cook for 5 minutes over low heat. Remove from heat and let stand
for 10 minutes. Puree in a blender and serve hot. Yum!
