Baked Potatoes (YUKON GOLD)

I've found that the Yukon Gold potatoes have a rich buttery flavor
even before anything gets added.

They're pretty much all-purpose. Kind of midway between a waxy boiling
potato and an Idaho-type baking potato. They also have a golden yellow
color. They are not always available in the supermarkets but I'm
starting to see them more and more.
