Gimme Lean

Sheila, you can certainly re-heat Gimme Lean successfully, and though I
haven't tried it, I can't see any reason why you couldn't freeze and then
reheat dishes containing. The main thing is to eat it hot (or at least
still warm) if you want it to taste good.

When I buy a roll or 2 or several of Gimme Lean, I cut each roll in half
and put the half-rolls all together in a big freezer bag. Then I can just
pull out the right amount for a meal (we're a family of 2) and cook just
what we need, since our problem usually isn't leftovers--it's that if I
cook a whole roll, we might just eat it all at one sitting! I've fed
Gimme Lean to SAD eaters who loved it (didn't tell them what it was till
after the meal).

Anyway, you might try cutting up the rolls in serving-sized portions so
you can cook only what YOU need and just keep the rest in the freezer.
