Lunch ideas

Here are some tried and true lunch ideas.  I always take my lunch to work as I work in an OR where we have 30 minutes(not one minute more) to eat lunch.  Most times I just take leftovers as I have access to a microwave.  Any of these are good at room temp.Joan from iced in Bangor, WI

                        Cream Cheese Veggie Spread

--------  ------------  --------------------------------
     1/4  Cup           Carrot -- grated
   1      Tablespoon    Onion -- chopped
   1      Tablespoon    Green Pepper -- chopped
     1/4  C             Radishes -- Chopped Fine
   4      Ounces        Nonfat Cream Cheese

Mix all ingredients and spread on bread or use as a filling in Nonbread Sandwiches.  Variations: Use other veggies of your choice, or pineapple and raisins, or raisins and nuts. NONBREAD SANDWICHES: * LETTUCE ROLLUPS: Use romaine, iceberg, or escarole.  You can even use spinach leaves if you have the patience.  Spread them with cream cheese, ricotta, or any other filling.  Or roll the lettuce around pieces of cheese, perhaps with a pineapple chunk . * VARIATIONS:  Use other wrappings for your rollups.  These could include cheese slices

                      Cucumber-Tomato Sandwiches <T>

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
   1      Clove         Garlic -- minced
   1      Sm            Onion -- sliced
     1/2  Tsp           Salt
     1/2  C             Balsamic Vinegar
   1      Tsp           Ground Pepper
   1      Med           Cucumber -- sliced
   1      Lg            Tomato -- sliced
                        Lettuce

Combine all ingredients except lettuce in the order listed.  Cover container and shake for 30 seconds.
Leave in refrigerator for at least 10 minutes so that flavors get absorbed in vegetables.  Then toast bread of choice.  Arrange lettuce on bread and add cucumber and tomato mixture.

NOTES : French bread works best. Can pack in container and put in pita bread just before eating.

                      Great Northern Mock Tuna Salad

   1      16 Oz Can     Great Northern Beans -- rinsed and drained
   2      Tbsp          Onion -- finely chopped
   2      Tbsp          Sweet Pickle Relish
     1/3  C             Celery -- chopped
   1      Tbsp          +1 Tsp    Nonfat Mayonnaise
   1      Dash          Garlic Powder
                        Salt And Pepper -- to taste

Place beans in a medium bowl and mash with a fork.  Add remaining ingredients and mix well.
Chill several hours to blend flavors.

Serving Ideas : Good in pita bread or on toasted bagel.

                              Pita Burritos

   8      Slices        Pita Bread
   2      Cans          Black Beans
   1      Lb            Rice
   1      Jar           Salsa

Cook rice. Drain juice from cans of beans, fill the can with water and drain again.  Mix the beans and rice and salsa.
Stuff the mixture into the pitas.

                       White Bean And Herb Sandwich

   1      C             White Beans -- drained
   2      Tbsp          Fresh Parsley -- chopped
   1      Tbsp          Chives -- snipped
   1      Tsp           Dill
     1/4  Tsp           Salt
     1/8  Tsp           Pepper
   2      Oz            Nonfat Cream Cheese
   1                    Cucumber -- peeled and sliced
                        Lettuce -- or sprouts
                        Bread

Combine first 8 ingredients in a food processor and process until smooth.  Taste for seasonings and add more herbs or lemon juice if necessary.
Spread mixture on 4 slices of bread.  Cover remaining 4 slices with layer of slightly overlapping cucumber slices.  Top with lettuce or sprouts.
