Dear Lee Ellen:
My favorite way to cook eggplant is too simple.  I just
slice it in 1/2" slices, sprinkle on some seasoned salt--
I really like Nature's Seasons--and bake for about 10 min.
in 350 degree oven.  A little parmesan sprinkled over it
is good, or a dab of spag. sauce, but it is very good just
as it comes out of the oven.
