Use your yummy Yukon Gold potatoes for gnocchi.  Absolutely the best tater
for gnocchi I have ever used.

For carbs I would go with whole grains.  Brown rice, whle wheat breads and
pasta.  The reason is this - carbs from whole grains are a whole fuel not
just sugar.  You get the nutrients, proteins and all the minerals that come
with a whole grain and a shot of carbs too.  And, as another kind person
posted, keep up the variety.  Mix grains and beans to get the positive
effects of having carbs and protein.  This month's Vegetarian Times
mentions parsing your carbs out over the day - don't load up.  Good Luck!
