Here's another recipe for the rice cooker.
Rice with Lentils (Adapted from Versatile Rice Cooker by Bob & Coleen
1/2 cup lentils, washed
3 cups broth
2 Tbs. dehydrated onion
1/2 tsp. dried garlic
2 Tbs. dried parsley
1 cup medium-grain rice
1/2 tsp. salt
1 tsp. ground cumin
1/4 tsp. red pepper flakes
1/4 cup diced sun-dried tomatoes (not in oil)
1 medium fresh tomato, peeled, seeded, chopped, for garnish
Spray rice cooker container with nonstick cooking spray. Add lentils, and
chicken broth. Cover and cook 15 minutes. Add remaining ingredients except
fresh tomato pieces and continue to cook until rice cooker shuts off.
Carefully remove cover, quickly stir and recover. Allow to steam for 10
minutes before serving. Spoon into a serving bowl and top with chopped
fresh tomato. Serve immediately.
