Hello Jayne. I find nutritional yeast to be very useful when I am
having a cheese craving (I'm vegan). You can make a cheesy-tasting
sauce from it:

* Yeast 'Cheese' Sauce *
------------------------

3 tbsp nutritional yeast flakes
2 tsp cornflour (think US for this is cornstarch?)
1/8 tsp dry mustard powder
1/8 tsp garlic powder
150ml (5 fl oz, generous 1/2 cup) soya milk

1. Mix dry ingredients in a pan. Slowly mix in the soya milk.

2. Bring slowly to simmering point, stirring constantly, then simmer
for a few seconds until thickened, stirring well.

Sorry, I'm not sure what quantity that makes. I think it makes roughly
enough cheese sauce for 1-2 rounds of cheese on toast.

I also just got an order from Dixie USA, including some Cheese Not!
sauce. I love this sauce - it is even better than my own invention
above. Dixie's dry cheese sauce mix includes nutritional yeast,
spices, tofu powder, soya lecithin and spices. Well worth it - and I
live in the UK so shipping was expensive. Still worth it, and the
customer service was excellent.
