RE: cooking Indian spices without oil

Hi-

  Could you let me know if you get any private answers to this?  I don't
have problems with the spices sticking or burning (I use a  little
veggie broth and a good non-stick pan), but what I have noticed is that
the flavor is *never* right.  The spices just don't blend together as
they should.  I haven't tried adding oil, but I'm becoming convinced
that this is the problem.

  I've tried recipes that are posted here, elsewhere on the web, and a
very good vegetarian Indian cookbook that I have (omitting all added
fat).  The dishes turn out pretty good, and you can tell that they have
the potential for being excellent, but there is still something about
them that just isn't *right*.
