My favorite spinach recipe is quick and easy:

Clean several big bunches of spinach, put in big soup pot with lid.  Add
about 1/4 cup of water, 1/4 cup of white wine, 1/4 cup of lemon juice,
couple tablespoons of dried veggie bouillion, chopped onion, minced garlic,
chopped tomato, salt and pepper.

Steam until wilted.  Serve with a bit of the broth, which may be the best part.
