Preparing Beets

To Jacqueline: First you have to peel beets before you cook them. When I was
a kid my mom showed me how. Trim the stem of the beets  to about 2 inches, do
not cut the root off. 

 Boil a pot of water. When the water comes to a rolling boil, add the beets.
Let sit in the boiling water for about 1 to 3 minutes. (You have to
experiment, the time varies according to the size of the beet.) Remove one at
a time and peel  and remove the top and root with a sharp knife under cold
running water. (The cold running water helps you keep from burning your
fingers too much.) After peeling, the beets are much easier to cook. 

The bigger the beet the tougher it is so you want to pick smaller size beets.
About golf ball size or smaller are really superb.
