Someone was requesting a plain and simple way to use eggplant. I love eggplant
and lately I've just been broiling it - slicing it and putting it under the
broiler, turning it over and browning the other side too. I also roast some
red peppers. Then you have them both available for sandwiches, for slicing on
top of any other casseroles or veggies you're eating, or my current favorite,
a salad. I like to cut up some of the eggplant and some red pepper, plus some
tomato, zucchini, and onion. I bring it to work and at the last minute put my
favorite FF dressing on it and it's a great salad.

I also have a request - do any of you have a favorite pancake recipe? Thanks.
