Hi...

Someone was after party food ideas, and someone else was having a pate
craving. I made some "Baba Ganoush" on the weekend and was going to post
it anyway. I think it fits both of these bills. It was really great.
Probably been posted before so apologies if it has.

My only doubt is about the Tahini...do people know how much fat would be in
3/4 Tablespoon of Tahini? I hope not too much, otherwise this recipe
mightn't qualify. Perhaps it would be fine with the tahini left out.
Anyway, it was really delcicious, completely "morish"..

Baba Ganoush...modified from Madhur Jaffrey's Eastern Vegetarian Cooking (An
excellent though not "low fat" cookbook).

3 Japanese style medium long eggplants
2-3 Tablespoons of lemon juice
2 small or one large garlic clove
3/4 Tablespoon of tahini
1/2 teaspoon salt

Prick the eggplant and roast in oven or grill until skin charred all over.
(I baked them for about 30 min in my high speed convection oven). While
hot, peel off skin and discard skin.. (This was easy for me). Roughly chop
eggplant, put in food processor with remaining ingredients and blend until
really smooth.

That's it. It was definitely nicer after a few hours in the fridge. It was
so creamy and satisfying..I had it with some carrot and celery sticks, and
some non fat home made corn chips, it was like eating a dip from my former
life of sour cream etc...very nice, dead easy to make.

BREAKFAST: We eat fresh fruit salad for breakfast everyday (as per "Fit for
life" followers) and we love it, never get sick of it, look forward to it,
etc.

Thanks to everyone who responded about Andrew's weight. I think I can con
him into seeing a doctor after everyone's help.

Janine
